Cassia cinnamon, also known as Chinese cinnamon or Cassia, originates primarily from southern China.
It is derived from the bark of trees belonging to the species Cinnamomum cassia (sometimes referred to as Cinnamomum aromaticum).
Cassia cinnamon is widely cultivated in other Asian countries as well, including Vietnam and Indonesia. It differs from true cinnamon
(Cinnamomum verum or Ceylon cinnamon), which originates from Sri Lanka and southern India.
